In a pan stir-fry the onion and the guanciale. When this is crisp, add a spoonful of balsamic vinegar, then add the Corbara tomatoes and cook 5 minutes.


Cook the pasta in abundant salted water. Drain 5 minutes earlier than cooking time and finish cooking in the pan with the tomatoes. To finish, add pecorino, pepper and basil.
